Olive Twist: Multi-purpose Tomato-Olive Relish

This tomato-olive relish is really easy to make and its good on all kinds of things: eggs (as above), burgers and sandwiches, fish and meat, crostini etc.

  • 4 tomatoes
  • 1/4 cup sliced kalamata olives (get good quality ones!)
  • 2 cloves of diced garlic
  • 2 tbsp red wine vinegar (or white, apple cider)
  • 1 tbsp white sugar
  • olive oil, salt & pepper
  1. Warm olive oil in a pot. Sautee garlic over medium heat.
  2. Add tomatoes and olives, plus a pinch of salt and pepper.
  3. Stir for a couple minutes, then add vinegar and sugar.
  4. Keep simmering over medium heat for 15 minutes, until tomatoes are stewed and much of the liquid has evaporated.
  5. Serve immediately or store for a few days and put on breakfast, lunch and dinner!
