What to do with Root Vegetables: Potato Pizza

Winter is not classically a great time for (vegetarian) pizza because everything awesome like tomatoes and peppers are super expensive. This pizza is an excellent way to use any root vegetable, in a way that helps you feel like you aren’t just eating stew for 6 months. Hélène, who has a tendency to suggest root vegetable dishes in the height of summer, actually wins out on this one – I’ll absolutely eat it year round.

Potato Pizza
1 pizza dough recipe (most people have their own – I cheat a bit and mix my dough in a bread machine but my actual favourite dough recipe is this one)

Béchamel Sauce
1 tbsp butter
1-2 tbsp flour
milk

Melt the butter in a saucepan, then whisk in the flour until you get crumbs (you may need more flour). Add a splash of milk and whisk until you have a paste. Continue adding milk in small to medium amounts until you have a smooth sauce that is thick enough to spread on a pizza but not pasty. You can add salt and pepper to this if you like.

Toppings
mozzarella, grated
1 large potato or equivalent (I used 6 nugget potatoes yesterday) – slice, brush with oil, then roast on a nonstick pan or parchment paper until starting to brown
1/2 small onion, sliced or diced
2 cloves of garlic
fresh rosemary
coarse sea salt, lightly crushed
ground pepper

On your rolled out pizza dough, spread the béchamel sauce, then place the roasted potato rounds around the pizza. If you have a lot of potato, they can overlap, or they can be fairly spread out. Sprinkle mozzarella, then spread the onion, garlic, rosemary, salt and pepper on top. The rosemary can be chopped or you can leave the leaves whole.

Bake at 475˚ for about 10 minutes, checking often.

Other Root Vegetable Pizza Options
Replace the potato with butternut squash or acorn squash
Add pine nuts or walnuts to any pizza
Roasted beet, thyme and lemon (very thinly slice the lemon and place on top of the cheese)
Use blue cheese instead of mozzarella
