Best Caesar Salad Dressing

November 14, 2011

This tangy, lemony Caesar salad dressing – from the Food Network’s Tyler  Florence – is much better than the standard store-bought creamy stuff. Try  it on your next caesar (the standard being of course: romaine, grated parmesan and croutons).

  • 1 clove garlic, smashed with a pinch of salt and a little olive oil
  • 4 anchovy fillets
  • 2 egg yolks
  • 1 tablespoon Dijon mustard
  • 1 lemon, juiced
  • 2 tablespoons water
  • 1/2 cup extra-virgin olive oil
  • 1/4 cup freshly grated Parmesan, plus extra for garnish
1. combine all ingredients except for olive oil and parmesan in large bowl and whisk together.
2. slowly pour in olive oil, whisking constantly.
3. add parmesan and ground black pepper to taste.
