Blackberry Weekend: Vanilla Fudge Ice Cream

This ice cream is really the crowning glory of Blackberry Weekend. It does require special equipment (a donvier or ice cream machine) but past that, it isn’t very difficult to make. I ended up staying up until nearly midnight waiting for it to fully freeze so do plan ahead if you’re making it for guests or actually planning to have dessert at a reasonable time.

Blackberry Vanilla Fudge Ice Cream
Base Ice Cream Recipe from Mark Bittman’s How to Cook Everything Vegetarian

2 cups milk
1 cup heavy cream
1/2 cup sugar
1 vanilla bean, split lengthwise
2 tbsp cornstarch

Combine all ingredients in a saucepan. Whisk well, dissolving the cornstarch lumps, while cooking on medium heat until the mixture thickens. It is ready when it coats a spoon well, with minimal dripping.

Cool fully (I didn’t do this, which contributed to my late-night ice cream vigil) then pour into your ice cream maker. Once the ice cream has frozen about halfway but is still very soft, add the blackberries. They will be swirled in but not crushed fully, giving the ice cream a nice light purple colour.

Once the ice cream is still soft but approaching readiness, prepare fudge:

1/3 cup chocolate
1 tbsp butter
splash of heavy cream

Heat on low until fully melted. Let cool slightly so that it is not too hot but hasn’t yet hardened. Drizzle into ice cream, stirring a few time. It should freeze when it touches the ice cream – if you find it’s getting completely mixed into the ice cream, let both fugde and ice cream cool further.

If you are unable to drizzle and end up with chocolate chunks, don’t worry! This happened to my ice cream and the little fudge bits are just as delicious.

    I went blackberry picking on saturday and I also just acquired a Donvier. I was about to look up an ice ream recipe. It’s like you read my mind!
