Blackberry Weekend: Cheddar and Basil Crostini

Part of what I have loved about having so many blackberries around is the ability to play with flavours, which I probably wouldn’t do if I only had limited resources. But after tasting this delicious appetizer, it’s definitely made the  ‘must eat’ list for every blackberry spree!

I spent some quality time with blackberries in my balcony garden, trying out different flavours and the blackberry/basil combination was a dream. Paired with a good aged cheddar, the berries make a wonderful transition from sweet to savoury.

Blackberry, Cheddar and Basil Crostini

Thin slices of bread (use day-old if you can), drizzled with olive oil and sprinkled with salt and pepper
Aged white cheddar
Blackberries, lightly mashed
Basil, ribboned

Toast the bread in a 400 oven for about 5 minutes, checking frequently. Once they have cooled slightly, layer with sliced cheese and a small spoonful of blackberries, then garnish with a few basil ribbons. Easy!

Make With: Fresh summer corn on the cob and a large green salad for a great light dinner. Would be great with a pale ale!
